The perfect side dish for Rosh Hashana, with a hint of spiciness.
Note that you can definitely double this recipe but make it on two separate pans to give the veggies enough room to roast properly.
1/2 butternut squash
1 sweet potato
1 onion
4 carrots
Marinade: 1/3 cup honey, 2 tbsp sriracha, 1 tbsp paprika, 2 tsp salt, 1/2 tsp black pepper
DIRECTIONS:
Start by preheating oven to 400 F. Peel and cube all your vegetable. Line a baking sheet with parchment paper. Place veggies on the baking sheet and pour marinade on it. Mix to coat and scatter your veggies on the tray. Bake for 1 hour.
