Honey Mustard Salmon Salad

Eating healthy has never been my thing…


Because let’s be real here… I can cook for 2 days straight to host 20 people no problem. But when it comes to making myself lunch (which takes 10 minutes) I never seem to find the time.



Here’s one a my “simple lunches”. Enjoy

  • 2 tbsp old-fashion mustard

  • 1 tbsp oil

  • 2 tbsp honey

  • 1 tsp salt

  • 2 lb salmon, cut in fingers



DIRECTIONS:


  1. Start by preheating oven at 425.

  2. Line a baking sheet with parchment paper.

  3. Mix together honey, mustard and oil. Mix salmon fingers with sauce. Place in single layer on baking sheet and top with salt.

  4. Bake uncovered for 11 minutes.



Salad is arugula, baby tomatoes, cucumbers, olives, avocado.

Dressing is lemon juice, olive oil, salt, pepper, garlic powder.


Toss everything together and you’ve got yourself the best possible lunch!
