Homemade(ish) Strawberry Shortcake Cups

Wanna make dessert but you dont wanna bake / buy ?

That’s basically me ALL. THE. TIME.


The easiest is to make it look like you made a whole fancy dessert when really, you bought most of it and put it together last minute (but no one needs to know that)


My strawberry coulis is the only part made from scratch (takes a few minutes but worth making!) but the rest can be put together even during the holiday.

For the strawberry coulis:


  • 1 box strawberries

  • 1/2 lemon, juiced

  • 2 tbsp sugar


In a small saucepan, combine everything. Cook at medium heat until soft. Blend everything using a hand blender.



To assemble:


  • A store bought cake, or homemade (if you’re in the mood!) I used passover cakes

  • Whip topping (whip it beforehand)

  • Cut up fresh strawberries

  • Strawberry coulis

  • Slivered almond, or any nuts of choice



Layer first some coulis, then sponge cake so that it can absorb the strawberry flavors. Add cream then fresh strawberries, more coulis and top with nuts!
