I was dreaming of this dish all day. Not sure why, I am not even a huge fan of chicken but i still needed this.
I have to say, it was AMAZING. I kept eating more and saying how incredible this was. The chicken stayed so tender, the sauce was sweet, savory, with a hint of spice. Really just everything!
Note that you can feel free to add/remove veggies according to your taste. I would’ve added some edemame, shredded carrots, purple cabbage, radishes. Really anything you like would work.
1-2 chicken breast, cut in small pieces
2 tbsp corn starch
3 tbsp oil
1 onion, sliced
2 garlic cloves, minced
1 cup sliced peppers (any color)
1 cup frozen green beans
3 tbsp hoisin
3 tbsp soy sauce
2 tsp mirin
1 tsp sriracha (optional)
1 tsp sesame oil
Salt and pepper
3 blocks of rice ramen, or 2 regular ramen noddles.
Sesame seeds, to garnish
Scallions, chopped to garnish
DIRECTIONS:
In a bowl, combine chicken, corn starch, and about 1/2 tsp salt, 1/8 tsp pepper. Mix and set aside.
Prepare sauce in a small bowl: mix hoisin, soy, mirin, sriracha, sesame oil.
Cook the ramen according to package directions.
In a pan or wok, heat oil on medium heat. Add chicken pieces and keep separating them using a wooden spoon. Remove as soon as the chicken is cooked through. Set aside.
Add onion to the pan and saute until translucent. Add garlic and saute for another minute.
Add green beans and peppers (and any other veggies you would like to add). Saute until they soften a little.
Add sauce and let the vegetables soak it up. Add salt and pepper.
Return chicken to pan. Add ramen noodles. Mix everything until incorporated.
Top with sesame and scallion before serving!
