It’s damn cold.
And if you’re anything like me, you’re a real sucker for hearty homemade dishes.
I can seriously slurp on this one all day. Its comforting, filling, balanced.
BUT most importantly — it takes just one pot and a few minutes to prepare!
It’s a true winner!
2 carrots, diced
2 shallots, minced
5 garlic cloves, minced
3 tbsp oil
1 tbsp tomato paste
1 lb dark minced chicken
3/4 cup tomato sauce
1 tbsp paprika
Salt, to taste
1 tsp black pepper
1/2 tsp oregano
1/2 tsp dried basil
4 cups chicken broth
1/2 lemon, juiced
2 handful baby spinach
375g Mini shell pasta (or small pasta of choice)
DIRECTIONS:
Heat enough water to boil pasta in a small pot. Salt the water generously. Boil pasta al dente.
While boiling pasta, heat up a pot at medium high heat. Add oil.
Saute garlic and shallot, just until fragrant. Add in carrots and saute for a couple extra minutes.
Add in tomato paste and minced chicken. Break apart the chicken using a wooden spatula until fully cooked through. Pour in tomato sauce and spices. Add a large pinch of salt. Mix everything to incorporate.
Pour chicken broth and salt again. Let it come to a boil. Reduce heat to low. Add lemon juice and spinach. Mix and let it come together.
Only add pasta to soup before serving.
