Healthy Pessach Truffles

Pesach is the holiday when I make all my desserts. I find that store-bought desserts are not as tasty at all and can be anyways quite expensive.


I always like to serve little cookies or brownie bites with the dessert since they pair so well with a cup of hot tea post food coma!


These NO-BAKE truffle balls are SUGAR-FREE and GLUTEN-FREE, and they are quick to prepare! Have fun decorating them with anything you want and keep them in the fridge, ready to use at any point during the holiday. You can even freeze them in advance!

  • 13 medjool dates, pitted

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 1/3 cup almond butter

  • 1/4 cup shredded coconut

  • 1/2 tbsp cocoa powder

  • Optional topping: melted chocolate, hazelnut brittle, coconut, powdered sugar, cocoa.



DIRECTIONS:


  1. In a food processor, combine dates, salt and vanilla. Pulse until partially blended. Add rest of ingredients. Pulse until very well combined.

  2. Shape balls the size you want. Dip them in whichever topping you like, or enjoy them plain.

  3. Refrigerate for up to 10 days, or freeze.
