Pancakes are one of the things that my kids and I can eat over and over for breakfast and still love it everytime.
Sometimes I go all out on healthy ingredients but other times I need those buttery soft and fluffy ones! I would say this recipe is a middle ground. Also, 100% gluten free which makes them perfect for Pessach!
Healthy-ish Pessach Banana Pancakes
2 bananas
2 tbsp butter, mostly melted
1 egg
1 cup almond milk (or regular milk)
1 tsp vanilla
3/4 cup almond flour
3/4 cup potato starch
3 tbsp sugar
2 tsp baking powder
1 tsp baking soda
DIRECTIONS:
Start by melting the butter. In a medium size mixing bowl, mash bananas using a fork. Add butter and mix it in.
Add egg, almond milk, vanilla and mix until combined.
In a separate bowl, combine all dry remaining ingredients.
Add dry ingredients to wet and whisk everything together.
Heat a non stick pan over medium low heat. Spray with non stick cooking spray.
Using a 1/4 measuring cup, pour batter into pan. Feel free to make them as small or as big as you wish. I like them small!
After about 20 seconds, bubbles will start forming on each pancake - thats when u flip. Dont press on them because that deflates them. Spray the pan between each pancake!
Optional topping: hazelnut brittle, butter, pure maple syrup, fruit etc.
