Healthy-ish Pessach Banana Pancakes

Pancakes are one of the things that my kids and I can eat over and over for breakfast and still love it everytime.


Sometimes I go all out on healthy ingredients but other times I need those buttery soft and fluffy ones! I would say this recipe is a middle ground. Also, 100% gluten free which makes them perfect for Pessach!

Healthy-ish Pessach Banana Pancakes


  • 2 bananas

  • 2 tbsp butter, mostly melted

  • 1 egg

  • 1 cup almond milk (or regular milk)

  • 1 tsp vanilla

  • 3/4 cup almond flour

  • 3/4 cup potato starch

  • 3 tbsp sugar

  • 2 tsp baking powder

  • 1 tsp baking soda



DIRECTIONS:



  1. Start by melting the butter. In a medium size mixing bowl, mash bananas using a fork. Add butter and mix it in.

  2. Add egg, almond milk, vanilla and mix until combined.

  3. In a separate bowl, combine all dry remaining ingredients.

  4. Add dry ingredients to wet and whisk everything together.

  5. Heat a non stick pan over medium low heat. Spray with non stick cooking spray.

  6. Using a 1/4 measuring cup, pour batter into pan. Feel free to make them as small or as big as you wish. I like them small!

  7. After about 20 seconds, bubbles will start forming on each pancake - thats when u flip. Dont press on them because that deflates them. Spray the pan between each pancake!



Optional topping: hazelnut brittle, butter, pure maple syrup, fruit etc.
