One pan dinners are all I can think about in the summertime.
I love spending little time preparing but still having food that tastes amazing. It's the best of both worlds!
In this dish, the potatoes and sweet potatoes are definitely the stars. They caramelize in such a way that you cant get enough of them.
12 chicken drumsticks
7 white potatoes
2 sweet potatoes
2 red onions
1 head of garlic
2 tbsp paprika
1/2 orange juiced (with the pulp) and zested
1/4 cup silan
1 tsp salt
1 tsp black pepper
1/2 cup water
DIRECTIONS:
Preheat oven to 350 F.
Start by slicing your potatoes thinly, but not all the way through. Peel sweet potatoes and slice. Slice red onions. Peel garlic.
Place sweet potatoes at the bottom of a pan, along with sliced onions. Place drumsticks and potatoes on top. Scatter garlic cloves everywhere.
Mix orange juice with pulp, olive oil and paprika in a small bowl. Drizzle sauce everywhere and get everything coated in it. Drizzle silan everywhere. Sprinkle salt and pepper. Pour water.
Cover with parchment paper. Place in oven for 1.5 hour. Uncover and continue cooking for 1 hour, or until golden. Baste the chicken and potatoes a few times throughout cooking.
