Harissa Eggplant

Trying new cooked salads is what I love the most! And when they turn out good, i get so happy to add them to my cooked salads repertoire!

  • 2 eggplant, peeled and diced

  • Non stick spray

  • 2 garlic cloves, minced

  • 1 cup cilantro, finely chopped

  • 1/2 lemon, juiced

  • 2 tsp harissa

  • 2 tbsp olive oil

  • Salt, to taste



DIRECTIONS:


  1. Preheat oven to 400F.

  2. Line a baking sheet with parchment paper. Place eggplant on it. Spray with non stick spray and bake for 45-55 minutes.

  3. In a mixing bowl, combine garlic, cilantro, lemon, harissa, olive oil, salt. Toss in grilled eggplant. Mix and adjust salt.
