Trying new cooked salads is what I love the most! And when they turn out good, i get so happy to add them to my cooked salads repertoire!
2 eggplant, peeled and diced
Non stick spray
2 garlic cloves, minced
1 cup cilantro, finely chopped
1/2 lemon, juiced
2 tsp harissa
2 tbsp olive oil
Salt, to taste
DIRECTIONS:
Preheat oven to 400F.
Line a baking sheet with parchment paper. Place eggplant on it. Spray with non stick spray and bake for 45-55 minutes.
In a mixing bowl, combine garlic, cilantro, lemon, harissa, olive oil, salt. Toss in grilled eggplant. Mix and adjust salt.
