If I post a salad, it’s that it’s really good. This one is addictive. The way every component absorbs the acidity from the lemon and spiciness from the jalapeno, makes this salad one of my favorite to serve on shabbat/holiday lunches!
Arugula
Cucumber
Fenne
Jalapeno
Green apple
1/2 lemon
1/2 cup chopped dill
Olive oil
Salt and pepper
DIRECTIONS:
Start by placing a bed of arugula at the bottom of your serving dish. Top with thin slices of fennel and green apple (don’t cut them thick because you want them to absorb as much sauce as possible). Using a peeler, peel layers of cucumber lengthwise and add them to the salad. Top with small pieces of jalapeno.
Mix together lemon and equal parts of olive oil, salt and pepper. Dress your salad and serve immediately.
