Garlic knots are the easiest way to elevate a dairy meal!
I love to make them for Seuda shlishit, instead of regular Challah, when Shabbat in the summer are long and it actually becomes dinner.
Each knot is crispy on the outside and soft on the inside, and packed with buttery garlicky goodness. The cilantro adds an herby taste that pairs so well with the garlic, plus adds a touch of color š.
It's SO EASY to make. The dough all comes together in a stand mixer bowl!
Dough:
2.5 tsp dry yeast
2 tsp sugar
1 cup warm water
1 cup apple juice (room temp)
1 tsp salt
4 tbsp oil
5 cups flour
Garlic topping:
10 cloves garlic, minced
1/2 cup cilantro leaves, minced
1 stick butter (1/2 cup)
DIRECTIONS:
In a stand mixer, proof yeast with sugar and water. Once bubbly, add apple juice, salt, oil and flour.
Knead for 10 minutes. Cover the dough and let it rise for 1 hour, or until doubled in size.
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Using balls of dough of about 30 grams each, form a strand. Flip it over your 3 fingers, then place one side of the strand inside to form a knot (refer to video). Place on parchment. Repeat for all.
Melt your butter in microwave. Add your garlic and cilantro. Brush on each knot. You will have leftover mixture.
Bake for 35 minutes. Once out of the oven, brush more garlic mixture on top.
