Welcoming the famous “galettes salées”


A moroccan type of “cracker” that is salty and keeps you wanting for more. It is the best savory snack you can have on hand.

  • 3/4 cup oil

  • 3/4 cup water

  • 1/2 cup sesame

  • 2 tsp kosher salt

  • 1 tsp baking powder

  • 3 1/4 cup flour



DIRECTIONS:


  1. Start by preheating your oven to 350 F.

  2. In a mixing bowl, combine all ingredients besides for the flour. Mix to get rid of any lumps. Mix in the flour and knead using your hand. It is a stiff, non sticky dough texture. Let the dough rest 10 minutes.

  3. While it rests, get your tools out. Separate dough in 8 equal parts.

  4. Using a rolling pin, roll out just a little your first ball. Set your pasta maker at the thickest option. Roll out your dough. Fold the rolled out dough in 3. Repeat 3 times the rolling and folding process.

  5. Set your pasta maker to a thiner option (number 3 or 4) and give the dough a last roll.

  6. Using a dough cuter, cut your trims and save them to make more galettes. Make slits (not all the way through) on your dough to define your galettes.

  7. Place on baking sheet (not lined). Repeat for all dough balls.

  8. Bake for 20-25 minutes. The bottom should get a little golden.
