I've always been very into adding fruit to my cakes, but only really stuck to one at a time. This time I made it with a variety of different fruits and it came out amazing! Picture a cross between a fruit crumble and a cake...
Not only is it so delicious, but it also looks beautiful to serve!
3 eggs
1.5 cups sugar
3/4 cup oil
3/4 cup orange juice
2.5 cups flour
3 tsp baking powder
1.5 tsp vanilla
2 peaches, peeled and halved
2 prunes, peeled and halved
1 cup blueberries
Crumb:
1/2 cup brown sugar
1/2 cup flour
1/2 stick margarine or butter
DIRECTIONS:
Preheat oven to 325 F. Spray a springform pan with non stick spray.
In a mixing bowl, place eggs and start beating with a whisk. Slowly add in the sugar while whisking until a thick texture forms.
Add in all other ingredients besides for fruits. Whisk until combined and smooth. Transfer batter in the pan. Place springform pan on top of another pan just to make sure no batter leaks out in the oven.
Place fruit halves upside down and add in blueberries everywhere while slightly pushing them down.
Combine crumble ingredients in a small bowl and sprinkle it on top of your cake.
Bake for about 90 minutes, or until toothpick comes out clean.
Optional: once cooled, sprinkle powdered sugar on top.
