AKA “Yellow Meatballs” by my kids🤍
Been making these for years since my kids had them once at my cousin’s house.
They are great on a bed of couscous, rice, pasta… or on Pessach, a yummy quinoa! The yellow sauce pools into the starch, which absorbs it and it just becomes the best!
Best kid friendly food!
Meatballs:
1 kg minced chicken (brown and white mixed)
1 onion
1 russet potato
1 cup matsa meal (use breadcrumbs if not pessach)
1 1/2 tsp turmeric
1 tsp garlic
1 tsp paprika
1 tsp salt
1 egg
2 tbsp oil
Sauce:
1.5 cup water
1 tsp turmeric
1 tsp salt
DIRECTIONS:
Start by processing your onion and potato in a mini chopper.
In a mixing bowl, combine all ingredients. Mix until incorporated.
Using oil for your hands, form balls and set aside.
Preheat oven to 350 F.
Heat a nonstick skillet to medium high heat, then add a thin layer of oil. Fry meatballs on both sides in batches and set aside in a baking dish.
Once done, mix sauce ingredients together in a bowl and pour on meatballs in baking dish.
Cover tightly and bake an extra 45 minutes in the oven.
