Alfredo sauce is one of my first loves!
I can’t even begin to count how many fettuccine Alfredo I had in my life, from so many places.
Recently, I decided that I had to master it to be able to make it from home and enjoy a hot bowl of fresh fettuccine with that smooth and creamy sauce!
And I am proud to say that it is probably the best one I have eaten in my life. No mushroom, no weird add-ons, just plain yummy Alfredo!
1/4 cup butter
2 garlic cloves, minced
1 cup heavy cream
2 tbsp cream cheese
1 tbsp pasta water
1/4 tsp oregano
1/4 tsp dried parsley
Salt and pepper, to taste
Parmesan cheese, to sprinkle
DIRECTIONS:
In a medium size pan, melt your butter. Add garlic to butter and saute until fragrant.
Lower heat to medium low. Add cooking cream. Whisk constantly for a few minutes to avoid lumps.
Add cream cheese, pasta water and spices. Whisk until everything is smooth and creamy. Adjust seasoning to taste.
Toss is your favorite pasta (cooked al dente) and mix to coat pasta in the sauce. Top with parmesan cheese.
