Salmon is an easy weekday fish that comes together in minutes.
Really any flavor combo works as long as they are balanced. I had to share this one because it was one of the top fishes i made and took under 10 minutes to prep!
1/2 salmon filet
3 tbsp oil, divided
1 large onion, thinly sliced
1/4 of a fennel, sliced
1 clove of garlic, sliced
1 lemon juiced
1/4 cup + 2 tbsp fennel leaves
Salt and pepper, to taste
2 tbsp capers
A handful of parsley, roughly chopped
DIRECTIONS:
Preheat oven to 425 F. In an oven safe dish, spread 1 tbsp of oil evenly. Lay salmon filet on it. Set aside.
In a pan, heat 2 tbsp of oil on medium high heat. Add onions and saute until translucent. Add fennel and saute until brownish and a little softer.
Add lemon, garlic and 1/4 cup fennel leaves and saute for a couple minutes extra. Add salt and pepper and mix to incorporate.
Top salmon with fennel mixture. Add capers, 2 tbsp fennel leaves and parsley.
Bake, uncovered, for 18 minutes then switch to broil for 2-3 minutes extra.
