One stop shop for all your meat desires!
12 english ribs (about 2.5kg)
Oil
1 onion, sliced
2/3 cup dry red wine
1/4 cup honey
2 tbsp tomato paste
1 cup chicken broth
DIRECTIONS:
Start by preheating your oven to 300 F.
Dry your ribs well. Salt them generously.
Heat a pan at high heat. Add enough oil to cover the surface. Sear each rib on both sides until a nice browning forms. Do not flip your rib if they are stuck to the bottom of the pan. You won’t need to force once they are fully seared. Work in batches, do not overcrowd your pan. Once seared, transfer in a baking dish.
While the pan is still hot, add onions. Sauté until brown. Add wine and let the alcohol evaporate. Reduce heat to medium low.
Add tomato paste and honey and let it caramelize together. Add chicken broth. Let it come to a simmer and turn off heat.
Pour sauce over ribs. Cover very tightly with foil. Bake 2-3 hours, or until fall off the bone.
