Easy Healthy Flourless Blender Muffins

These KFP, healthy, 1 step, blender muffins are so good, I might even continue making them after Pessach.


I couldn’t believe how incredibly delicious these muffins were when I tasted them. They are super pillowy and moist... basically what Pessach muffins are usually NOT. I am super thrilled and proud to be sharing this one because I totally made it up, and it is super unlike me! So I really hope you will give it a try this Pessach and treat your family to this yummy healthy recipe!



Blender muffins



yields around 12 large muffins


  • 2 bananas

  • 1 egg

  • 1/2 cup applesauce

  • 1/4 cup honey

  • 1 3/4 cup almond flour

  • 3/4 cup potato starch

  • 3 tbsp oil

  • 1/4 cup almond milk

  • 1/3 cup hazelnut brittle

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp vanilla

  • 1/2 tsp salt

  • Mini chocolate chips and more hazelnut brittle, optional



DIRECTIONS:



  1. Preheat oven to 400F. Line a muffin tin with muffin liners.

  2. In a strong blender, or in a food processor fitted with the S blade, combine all ingredients.

  3. Process it until a smooth consistency is formed. If you would like to add chocolate chips inside, just mix them in with a spatula.

  4. Pour muffin batter until about 3/4 of the muffin liners. Top with more mini chocolate chips and hazelnut brittle.

  5. Bake for 15 minutes.
