These KFP, healthy, 1 step, blender muffins are so good, I might even continue making them after Pessach.
I couldn’t believe how incredibly delicious these muffins were when I tasted them. They are super pillowy and moist... basically what Pessach muffins are usually NOT. I am super thrilled and proud to be sharing this one because I totally made it up, and it is super unlike me! So I really hope you will give it a try this Pessach and treat your family to this yummy healthy recipe!
yields around 12 large muffins
2 bananas
1 egg
1/2 cup applesauce
1/4 cup honey
1 3/4 cup almond flour
3/4 cup potato starch
3 tbsp oil
1/4 cup almond milk
1/3 cup hazelnut brittle
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
Mini chocolate chips and more hazelnut brittle, optional
DIRECTIONS:
Preheat oven to 400F. Line a muffin tin with muffin liners.
In a strong blender, or in a food processor fitted with the S blade, combine all ingredients.
Process it until a smooth consistency is formed. If you would like to add chocolate chips inside, just mix them in with a spatula.
Pour muffin batter until about 3/4 of the muffin liners. Top with more mini chocolate chips and hazelnut brittle.
Bake for 15 minutes.
Enjoy,
Guila
