Let’s start off the week with a super simple dinner idea, that is totally customizable to your family’s liking!
This ONE PAN, NO DISHES, 9X13 DISH is so easy to put together and such a hearty meal that pleases everyone in your family. Don't like chickpeas? Remove them. You like corn? Peppers? Beans? Broccoli? Just add them in! This will definitely be an “on repeat” dinner in my house since it is just SO easy to put together!
3 chicken cutlets, cut into small pieces
1 onion, diced
1.5 cups of raw rice
1/2 can chickpeas, washed and drained
1 tbsp ketchup
1 tsp mustard
1/2 tbsp Paprika
1 tsp garlic powder
1 tsp turmeric
1 tbsp oil
Salt and pepper
1/4 cup cilantro, chopped
2 1/4 cup water
DIRECTIONS:
Preheat oven to 350 F.
In a ziploc, mix together cutlets, ketchup, mustard and spices.
In a 9x13 oven safe dish, place onions at the bottom. Top with raw rice. Add seasoned cutlets, chickpeas and cilantro. Mix everything to combine.
Add water. Cover with double layer of foil and place in the oven for 40 minutes.
