This recipe, just like so many, started with a craving. A craving of something that I barely ever tasted, but that I was dying to create. And so I got to work and I am so happy with the results.
It’s everything you want from a nutty treat with a hint of sweet touch.
I seriously cannot get enough of them… they are the best compliment to my killer afternoon iced coffee☕️😉
2 eggs
3/4 cup sugar
1/4 cup oil
1 tsp vanilla
1 tsp almond extract (optional)
2 1/4 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup chopped nuts and dried fruit
1 yolk, to top
DIRECTIONS:
Preheat oven to 350 F. Line a full size baking sheet with parchment paper.
In a mixing bowl, combine eggs and sugar and whisk. Add in oil, vanilla and almond extract.
Add in your flour, baking powder and soda and salt. Mix using your hand until a dough forms. Add your nuts and dried fruit and mix them in.
Separate dough in 2. Form logs and press down on baking sheet forming two long flat rectangular shape.
Brush with egg yolk. Bake for 16 minutes. Let it cool for 15 minutes before slicing your biscottis.
Lay each one flat and bake again for 7 minutes per side.
