Dried Fruit Chicken

This is one of my most popular recipes on Instagram! I've tweaked it many times over time. It's amazing. Give it a try!

  • 2 onions, sliced thinly

  • 1/4 cup oil

  • 1 cup dried apricots, checked

  • 1 cup raisins

  • 1/2 cup dried prunes

  • 1/2 cup wine

  • 3 tbsp silan

  • 1 tsp garlic powder

  • 1 tbsp paprika

  • Salt and pepper, to taste

  • 12 chicken pieces (drumsticks and/or thighs)



DIRECTIONS:


  1. Heat a large braiser or heavy bottom pot at medium high heat. Add oil.

  2. Add onions and fry until brown. Add dried fruits and caramelize with the onions.

  3. Pour wine and let the alcohol evaporate and the wine to penetrate the dried fruits. Then, add silan, paprika, garlic powder, salt and pepper.

  4. Carefully place your chicken pieces in the sauce, while basting them at the same time. Add about a cup of water to create a sauce.

  5. At this point you can either simmer on the stove top, covered for about 1.5 hours and about 30 minutes uncovered. Or, cover and bake it in the oven at 350 for about 1.5 hour and another 30 minutes uncovered.
