This is one of my oldest recipes. One of the first things I learnt to make, and have been making it the same way ever since.
Spinach rocks every single dish that I add it to. It has a special power to absorb any flavor profile you give it. One of my favorite vegetables!
3 tbsp oil
1 onion, diced
500g frozen spinach
2 frozen pie shells
7 eggs
3/4 cup heavy cream
1/2 cup feta cheese
1 tsp salt
1/2 tsp granulated garlic
1/2 tsp black pepper
Shredded cheese, to top
DIRECTIONS:
Start by preheating oven to 350 F.
Heat a pan to medium high heat. Add oil. Fry onion until translucent.
Add frozen spinach and cook down until no more water remains. Let it fully cool.
Poke a few hole in your pie shells using a fork. Par-bake for 10 minutes.
In a mixing bowl, combine eggs, heavy cream, feta, salt, garlic and pepper. Mix until combine. Mix in the cooled spinach mix.
Pour in your par-baked pie shells. Sprinkle some shredded cheese on top. Bake for 45-55 minutes, until the middle of your quiche is fully set.
