Crunchy Honey Mustard Salmon

A quick fresh salmon dish to whip up last minute. Takes 5 min to put together and looks like a beauty!!

  • 1.5 lbs Side of Salmon

  • 3 tbsp honey

  • 4 tsp dijon

  • 2 tbsp olive oil

  • 1 tbsp soy sauce

  • 3/4 of a full bag of vegetable chips, crushed

  • 2 Scallions, sliced



DIRECTIONS:


  1. Preheat oven to 425 F. Line a baking sheet with parchment paper. Place your side of salmon on your baking sheet.

  2. In a small mixing bowl, combine honey, dijon, olive oil and soy sauce. Mix together and brush all over the salmon, including under. 

  3. Generously top with crushed vegetable chips and chopped scallions. 

  4. Bake for 18 minutes. 

  5. Enjoy hot straight out of the oven
