These Salmon fingers were totally unplanned. I was making fish for a RH recipe and had extra so I wanted to make something sweet and spicy out of it. But also crunchy. So I made these crispy, golden little bites and couldn’t have enough of them! And with a plain 1:1 honey mustard dressing, it was bomb!
They are great as a holiday or Shabbat lunch appetizer and are heated up super well on a hot plate (uncovered, flipping to avoid burning).
yields about 20
3 slices of salmon, sliced in finger shapes
1 cup panko
1 tsp crushed red pepper flakes
1 tsp paprika
1 tsp brown brown sugar
1/2 tsp granulated garlic
1/2 tsp granulated onion
1/2 tsp salt
1/2 black pepper
1 egg, lightly beaten
DIRECTIONS:
Preheat oven to 400F. Line a baking sheet with parchment paper.
In a small bowl, mix panko with all spices.
Dip salmon fingers into egg then spiced panko. Place on baking sheet. Repeat process until all salmon is coated.
Bake for 8-10 minutes.
Prepare dressing: same amount of honey to dijon mustard.
