Honestly, if u want a recipe that comes together in one bowl, using your hand to mix, this is the one. Its requires so little utensils, which can be a huge plus for most of us who dont have an entire separate pessach fully loaded kitchen!
It pairs great with your morning (or afternoon) coffee and a yummy snack for your hungry kiddos (cuz we all know how many times they can ask for food when theyâre homeđ ).
1/2 cup sugar
1/2 cup brown sugar
1/2 cup oil
1 egg
1 1/4 cup almond flour
1/4 cup potato starch
1/2 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1 cup @gefen_foods granola clusters, roughly broken down
1/2 cup mini chocolate chips
DIRECTIONS:
Preheat oven to 350 F. Line a full size baking sheet with parchment paper.
In a medium size mixing bowl, combine both sugars, oil and egg. Mix using your hand to break apart any lump of sugar that might have formed. I recommend using a glove.
Add almond flour, potato starch, baking soda, vanilla, salt and mix with your hand until a dough forms.
Add @gefen_foods granola clusters and chocolate chips. Mix to combine.
Transfer dough to baking sheet. Form 2 long flattish logs.
Bake for 15 minutes. As soon as it comes out of the oven, slice your cookie sticks.
