With summer coming up soon, this is the perfect light lunch or supper! You need to give it a try!!!
For dressing:
2 bunches of cilantro
About 3/4 cup of mayo
1 garlic clove
3/4 of a full preserved lemon (you can do it with regular juice, i just wouldn’t know the quantities. But make yourself preserved lemons😊 THEY ARE WORTH IT)
1 tbsp mustard
2 tbsp olive oil
salt and pepper, to taste
Blend everything in a food processor or in a strong blender for a creamier texture.
Topping:
1 roma tomato
1 shallot
1/2 tbsp olive oil
Salt and pepper
2 tsp lemon juice
DIRECTIONS:
Preheat oven to 425 F. Line a baking sheet with parchment paper. Start by brushing a good amount of dressing on your salmon. Place the tomato topping on each piece of salmon. Bake in the oven uncovered for 17 minutes (i did 15 minutes because i had to reheat it on the hot plate. Came out perfectly cooked)
