Channukah is over but I still needed to get that one out there.
I find it SO hard to find good churros. Crunchy outside but still enough inside to feel like a “donut” texture. Not too oily, not overly sweet. Theres just so many criteria.
I can honestly say that these are the ones. If you follow each step, the results will be out of this world!! And don’t skip the chocolate sauce!!!
1 cup water
1 stick butter or margarine (1/2 cup)
1 tsp vanilla
1 tbsp sugar
1/4 tsp salt
1 cup flour
3 eggs
DIRECTIONS:
In a small saucepan, combine butter or margarine, water and sugar. Bring to a boil then add the vanilla and mix it in. Turn off the heat, then add salt and flour. Using a spatula or wooden spoon, mix until texture thickens. Let it cool for 10-15 min.
Using an electric hand mixer, add 1 egg at a time until a soft, thick and sticky batter forms.
Transfer about half into a piping bag fitted with a large star shape end (can be a ziploc bag as well). You will add to the piping bag as you go.
Heat pot of oil at 360-375F. Pipe the batter straight into the oil. Cut it as short or as long as you want. Drain on paper towels. Toss in white sugar (you can add cinnamon to your sugar if you’d like).
BONUS
Decadent Chocolate Sauce
150 gr. bittersweet chocolate (good quality), roughly chopped
3/4 cup heavy cream
In a small sauce pan, bring heavy cream to a light boil. Turn off the heat. Whisk in chocolate until melted through and combined.
