Chunky Veggie Pasta (with Homemade Tomato Sauce)

Freshly made sauce, sauteed vegetables, fresh herbs, perfectly cooked pasta. Honestly what else do you need?!


Perfect for this week to accompany a fish or just add tuna to the pot and make it a full meal!

Sauce:


  • 1 can whole tomatoes, drained

  • 5-6 garlic confit (or raw)

  • 1 shallot

  • About 1 tbsp each fresh basil and oregano leaves

  • Salt, to taste



Pasta:


  • 3 tbsp oil

  • 1 onion, diced

  • 1/2 red pepper, diced

  • 1 zucchini, diced

  • 350 g fettuccine

  • Salt, to taste



DIRECTIONS:


  1. Start by boiling your pasta in salty water, according to package directions.

  2. While pasta boils, start making your sauce: blend all sauce ingredients in a blender.

  3. Heat a pan over medium high heat. Add oil. Fry onion until translucent. Add peppers and zucchini and continue frying until nice char forms.

  4. Lower heat to a simmer. Add sauce to vegetables to heat. Salt if needed.

  5. Once pasta is ready, add them straight from the water to the sauce. Mix in sauce until well incorporated. Salt if needed.
