Chicken Arayes (chicken stuffed pitas) are so easy to put together and you got yourself a full meal right there! You can even prep the chicken mixture in advance for easy last minute dinner!
3 pitas, split in half
1 lb minced chicken
1/2 onion
1 clove garlic
1/4 cup cilantro
1 tsp paprika
1/2 tsp turmeric
Splash of lemon
Salt and pepper
Olive oil, for brushing
DIRECTIONS:
Preheat oven to 375 F.
In a mini processor, mince onion, garlic and cilantro.
In a medium size mixing bowl, combine chicken, onion mixture, paprika, turmeric, lemon, salt and pepper. Mix until combined.
Line a baking sheet with a wire rack. Fill half pitas with about 1/3-1/2 cup of the chicken mixture. Place on rack. Repeat for all.
Brush olive oil on both outside parts of the pitas.
Bake for 20 minutes. Flip pitas and bake another 5-8 minutes.
