Cheesy Eggrolls

Shavuot is approaching and all I can think about is cheesy goodness! These eggrolls are definitely the goodness you need


They are gooey, crunchy, flavorful… and they can be fried on the spot for the ultimate fresh experience!

  • 500g ricotta

  • 8 oz mozzarella

  • 1 egg

  • 1 tsp oregano

  • ½ tsp black pepper

  • favorite herb blend

  • 1 pack eggroll wrappers

  • 2 tsp cornstarch mixed with ¼ cup water

  • Oil, to fry

  • Marinara, for dipping



DIRECTIONS:


  1. In a mixing bowl, combine ricotta, mozzarella, egg and spices.

  2. Place one sheet of eggroll in front of you, corner facing down. Place about 2-3 tbsp of mixture in a horizontal log right on top of the bottom corner. Fold corner on the log. Brush cornstarch mixture on the 3 remaining corners. Fold the 2 sides inwards then roll the log in the wrapper. Repeat for all.

  3. Place on a parchment paper lined baking sheet and freeze. You can either transfer them to a freezer safe Ziploc bag and save them for when ready to fry. Or, fry on the spot.

  4. To fry: heat 2 inches of oil in a pot at medium heat. Fry directly from the freezer. Once golden on all sides, drain on paper towel.

  5. Dip in marinara sauce and dig in!
