Cheesecake filled Crinkle Cookies

These need no intro at all!

Crinkle cookies filled with cheesecake.


Just make them, you’ll understand the obsession!






Cookies:


  • 1 cup cocoa powder (120g)

  • 1 3/4 cups sugar (350g)

  • 1/2 cup oil (120mL)

  • 4 large eggs (room temperature)

  • 2 tsp vanilla

  • 2 cups flour (240g)

  • 2 tsp baking powder

  • 3/4 tsp coffee powder, optional

  • 3/4 tsp salt

  • 1 cup powdered sugar



DIRECTIONS:


  1. In a large bowl sift together the flour, baking powder and salt. Set aside.

  2. Add the oil and sugar to the bowl of a mixer fitted with a paddle attachment and beat together. Scrape bowl down and mix until combined.

  3. Add the cocoa powder in and mix on low scraping the bowl down halfway through. If you're using the coffee powder you can add in at this point.

  4. Add the eggs and vanilla in then mix until well combined. Dump the flour mixture in and mix on low. Scrape bowl down and mix until combined.

  5. Cover with plastic and refrigerate overnight or for at least 4 hour.



Cheesecake filling:


  • 8 onces cream cheese

  • 2.5 cups confectioners sugar

  • 2 tbsp flour

  • 1 tsp vanilla



Dump everything in a mixer and whisk together until well combined.

Refrigerate until ready to form cookies.



Assembly:


  1. Preheat oven to 350 F.

  2. Prepare a bowl of oil. Oil your hand between each cookie. This will help your hands not stick to the dough.

  3. Scoop out the chilled dough and roll into roughly one inch balls with your oiled palms. Flatten in the shape of a circle, making the center thicker than the outer parts.

  4. Scoop about a tsp of cheese filling and place in the middle of the dough. Close the dough carefully so the filling does not escape (Tutorial in shavuot highlights). Shape like a ball.

  5. Roll dough in powdered sugar and place on parchment lined baking sheet about 2 inches apart.

  6. Bake for 12 minutes. The cookies' edges will be set but the center will finish baking out of the oven.
