Here’s a recipe i made a while ago for a holiday magazine and I completely forgot to share it with all of you! It's simple ingredients but is beautiful on any table and very tasty!
12 chicken drumsticks
3 tbsp oil
2 large yellow onions, sliced in half moons
1 1/2 cup chicken stock
2 bags roasted and peeled chestnuts (about 1 cup)
1/2 cup silan
Salt and pepper
3 stalks fresh rosemary
DIRECTIONS:
Preheat oven to 350F. Pat dry your chicken. Heat an enamelled cast iron pan (oven proof) at medium high heat. Add oil.
Sear drumsticks on all sides. Remove and set them aside. Place onions in the pan and saute until soft and brown. Add stock and deglaze the pan using a wooden spatula.
Reduce heat to low. Return the chicken to the pan and baste with onion sauce.
Add chestnuts, silan, salt and pepper. Place rosemary on top.
Cover and bake for 1 hour. Uncover and bake an additional 40 minutes.
