Boulettes aux haricots

I’ve been making this dish for a while. As i was making it yesterday i scrolled down my page just to check if i can find the post to make sure I didn't forget anything. But i couldn't find it! Can't believe I'm only posting it now!! But right on time for the holidays!



meatball dish



Meat mixture:


  • 1 kg minced beef

  • 1 onion

  • 1 garlic clove

  • 1 cup cilantro

  • 1 egg

  • 1/2 cup breadcrumbs

  • 1 tsp paprika

  • 1/2 tsp cumin

  • Salt and pepper

  • 1/4 cup water, if needed


Sauce:


  • 1 onion, sliced

  • 250 g frozen french green beans

  • 2 garlic cloves, minced

  • 1 tsp paprika

  • 1/2 lemon, juiced

  • Salt and pepper

  • 1/2 cup water

  • Cilantro



DIRECTIONS:


  1. Add your onion, garlic and cilantro in a small food chopper to mince. Add that mixture to the meat and all other meat ingredients. Reserve water for the end and add as needed.

  2. Form meatballs. Heat a enamelled cast iron pan (or a heavy stainless steel pan) at medium high heat. Add enough oil to cover the surface. Sear meatballs on all side. Do not overcrowd the pan, work in batches.

  3. Reduce heat to medium. Add chopped onion to the oil. Saute until soft. Add green beans and saute until thawed. Add garlic, lemon, paprika, salt.

  4. Return meatballs to pan and mix them in carefully. Add water. Sprinkle cilantro on the meatballs. Cover and simmer on low for 45 minutes.
