Bomb Quinoa Salad

Very occasionally you will see a salad recipe on here. Nop, I’m not a salad lover! But when I really enjoy a salad, it usually ends up being posted here!



QUINOA


  • 1 cup raw quinoa, cooked according to package instructions

  • 1 sweet potato (with 1 tbsp olive oil, salt and pepper)

  • 1/2 pomegranate

  • 1/2 cup cilantro, chopped

  • 1/4 cup sunflower seeds


Dressing:


  • 1/2 lemon, juiced

  • 2 tbsp canola oil

  • 1 tsp honey

  • Salt and pepper, to taste



DIRECTIONS:


  1. Preheat oven to 400 F.

  2. Cube the sweet potato in very small cubes. Place on a baking sheet. Drizzle olive oil, salt and pepper and mix. Bake for about 30-40 minutes, until golden.

  3. Combine cooked quinoa, pomegranate seeds, cilantro, sweet potato. Season with lemon, oil, honey, salt and pepper. Sprinkle sunflower seeds on top.
