Very occasionally you will see a salad recipe on here. Nop, I’m not a salad lover! But when I really enjoy a salad, it usually ends up being posted here!
1 cup raw quinoa, cooked according to package instructions
1 sweet potato (with 1 tbsp olive oil, salt and pepper)
1/2 pomegranate
1/2 cup cilantro, chopped
1/4 cup sunflower seeds
Dressing:
1/2 lemon, juiced
2 tbsp canola oil
1 tsp honey
Salt and pepper, to taste
DIRECTIONS:
Preheat oven to 400 F.
Cube the sweet potato in very small cubes. Place on a baking sheet. Drizzle olive oil, salt and pepper and mix. Bake for about 30-40 minutes, until golden.
Combine cooked quinoa, pomegranate seeds, cilantro, sweet potato. Season with lemon, oil, honey, salt and pepper. Sprinkle sunflower seeds on top.
