This easy-to-make delight combines nutritious ingredients effortlessly, creating moist, fluffy and flavorful muffins in minutes. Note that they are dairy but the yogurt can be replaced by non-dairy yogurt.
2 ripened bananas
1 egg
1/2 cup applesauce
3 tbsp honey
1 tbsp pure maple syrup
2 cups organic oats
1 tsp baking powder
1 tsp baking soda
2 tsp cocoa powder (optional)
1/2 tsp salt
1 1/2 tsp vanilla
1/4 cup greek yogurt
Topping: chopped nuts, chocolate chips, coconut, seeds (all optional) .
DIRECTIONS
Preheat your oven at 400F.
Combine all ingredients (besides for topping) in a high intensity blender and pulse a few times until everything is well combined.
Line a cupcake pan with cupcake liners and pour the batter until 3/4 of the liners are filled.
Top with any topping of your choice. I did chocolate chips, coconut, and a mixture of powdered almond and cashews.
Bake for 15 minutes, or until a toothpick comes out clean.
