Blender Healthy Muffins

Whip up wholesome goodness with this Blender Healthy Muffins recipe!


This easy-to-make delight combines nutritious ingredients effortlessly, creating moist, fluffy and flavorful muffins in minutes. Just blend, pour, and bake for a guilt-free treat that satisfies your cravings and nourishes your body. Elevate your on-the-go snacks with this delicious blend, even your kids will be all over it!





Note that they are dairy but the yogurt can be replaced by non-dairy yogurt.



  • 2 ripened bananas

  • 1 egg

  • 1/2 cup applesauce

  • 3 tbsp honey

  • 1 tbsp pure maple syrup

  • 2 cups organic oats

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp cocoa powder (optional)

  • 1/2 tsp salt

  • 1 1/2 tsp vanilla

  • 1/4 cup greek yogurt

  • Topping: chopped nuts, chocolate chips, coconut, seeds (all optional) .


DIRECTIONS


  1. Preheat your oven at 400F.

  2. Combine all ingredients (besides for topping) in a high intensity blender and pulse a few times until everything is well combined.

  3. Line a cupcake pan with cupcake liners and pour the batter until 3/4 of the liners are filled.

  4. Top with any topping of your choice. I did chocolate chips, coconut, and a mixture of powdered almond and cashews.

  5. Bake for 15 minutes, or until a toothpick comes out clean.
