When @erin.eats.mtl came up with the idea of recreating beaver tails, the 3 of us (Erin, Tammy @saladsnsweets and I) got together and challenged ourselves to come up with the most creative ways to recreate them for Chanukah.
They did not disappoint!
The flavours we included turned out incredible but the options for toppings are endless, so use what u have and have fun with it!

For the dough:
1 tbsp rapid rise yeast
1/2 cup warm water
1/3 cup sugar
1 cup warm milk
1 tsp vanilla
1/3 cup oil
1/2 tsp salt
2 eggs
5 cups flour
Oil for frying
DIRECTIONS:
In a bowl of your stand mixer, add yeast, warm water and sugar and lightly mix. Let proof for a few minutes.
Once bubbly, add in milk, vanilla, oil and eggs.
Then add flour and salt.
Knead for 5-6 minutes until dough comes together and is smooth. When pinching dough, it should stick slightly to your fingers.
Transfer to an oiled bowl, cover, and let rise for an hour or until doubled in size.
Oil or lightly flour counter. When removing dough from bowl, stretch into a long log shape.
Slice dough into 12 equal pieces. Shape it into a oval/ rectangle shape by lightly pressing dough - being careful to ensure that thickness of dough remains consistent throughout the entire piece (you don’t want the middle to end up thinner when flattening).
Let rest 20 minutes.
Heat oil to 330. Carefully transfer dough pieces to hot oil making sure to maintain oil temperature between 330-350. If oil gets too hot, the outside will brown and inside won’t cook though. Keep testing the oil in between each batch.
Cook for 3-4 minutes each side until golden brown. Transfer to a wire rack.
For the The Viral Dubai
Pistachio cream:
1 cup salted and roasted pistachios
1/4 cup powdered sugar
3 tbsp oil
1 tsp vanilla
2 tbsp whipping cream
In a high powered food processor, blend pistachios with sugar, oil and vanilla until smooth. You will need to use a spatula to push down batter occasionally.
Fold in whipping cream to loosen.
For khatafi:
Chop khatafi into small pieces.
Sautee in a dry pan (no oil), mixing continuously until golden brown.
To assemble:
Spread a layer of pistachio cream
Sprinkle khatafi
And drizzle with melted chocolate
Garnish with chopped pistachios.
For the Ultimate Breakfast:
Mix 1 cup sugar with 2 tsp cinnamon
Coat both sides of beaver tail in cinnamon sugar mix.
Top with whipped cream, sliced strawberries and bananas.
Drizzle maple syrup on top.
For the Torched S’mores:
Spread a layer of Nutella.
Top with mini marshmallows and use a kitchen torch to toast them.
Sprinkle graham crumbs.
