Another recipe that takes no time to put together and comes out perfect every time!
4 salmon slices
1/4 cup apricot jam
1/2 cup packed cilantro, chopped
1/2 lemon, juiced
1 lemon zested
2 tbsp oil
1 tsp salt
1/3 cup pistachios, crushed
DIRECTIONS:
Preheat oven to 425F. Line a 9x13 baking dish with parchment paper.
Place salmon slices on the parchment.
Whisk all ingredients in a small bowl besides for the pistachios.
Brush mixture over salmon. Finish off with sprinkling pistachios on each piece.
Bake for 14 minutes. Switch to broil for 1.5 extra minutes.
