Apple Turnover for a crowd

With Rosh Hashana approaching, I wanted to share my all-time favorite childhood pastry. Anytime I had to choose something, it was always the apple turnover that would win!!


Here I made a version that’s fit for a crowd and that serves beautifully! Heat it up and pair it with ice cream and you’re good to go!

  • 6 macintosh apples (5 diced small and 1 sliced thinly)

  • 1 cup sugar

  • 1/2 lemon, juiced

  • 1 tsp vanilla

  • 1 roll puff pastry

  • 2 tsp cinnamon sugar (sugar and cinnamon mixed)

  • 1 egg

  • Sliced almonds, for topping



DIRECTIONS:


  1. Preheat oven to 350F.

  2. Start by combining your diced apples, sugar, lemon and vanilla into a small saucepan. Bring to a boil then reduce to a medium simmer.

  3. While it simmers, roll out puff pastry and cut 4 rectangles from it. Place 2 of them on a baking sheet lined with parchment paper.

  4. Line apples in a straight overlapping line through the rectangle.

  5. When the applesauce is ready it will look like a mash with a few pieces. Place it on top of your lined apples.

  6. Cover rectangle of puff pastry with extra ones. This recipe gives 2 turnovers. Secure sides using a fork and score the top to let some air out.

  7. Brush egg on top. Sprinkle cinnamon sugar and sliced almonds.

  8. Place in the oven for 40 minutes or until golden brown on top.

  9. To serve, reheat, cut in triangles, and top it with cold ice cream!
