A super basic soup that is 100% comfort food for both your kids and yourself, and super easy to make.
It was actually born at my school cafeteria! And now a thousand years later, my kids are requesting that same soup we used to have as children because they are also having it from the same cafeteria!
The biggest treat for my kids is making that soup and I totally get it.
1 small yellow onion, diced
2 tbsp oil
400 ml tomato sauce
5 cups water
1/2 tsp dried oregano
1/2 tsp paprika
1/2 tsp garlic powder
2 tsp salt
1 tbsp sugar
1 tbsp lemon juice
1 1/2 cup alphabet pasta
DIRECTIONS:
Heat a pot with oil at medium high heat. Once hot, saute onion until soft.
Lower the heat to medium, add tomato sauce. Add water.
Add all spices and seasonings.
For creamy purposes, and for my kids not to notice the onion and garlic pieces, I blend the sauce using a hand blender.
Bring soup base to a boil.
Turn the heat OFF, add in your pasta, mix quickly, then COVER the pot for at least 10 minutes. This will allow the pasta to cook, but not overcook.
When your pasta is cooked, adjust salt level.
